Aging deer.

Do any of you that hang your deer a couple of weeks in a cooler wrap the carcass in plastic?
 
That would be wet aging and no we prefer dry aging. Have hung deer and elk for over 14 days.
 
Do you guys toss the rind that forms or add that into the grind pile?
Toss it.

Lots of bacteria will be growing on the surface. Not all bacteria is bad but there is no reason to chance it. Not to mention it is dry and would have a weird texture.
