I found my load for the lead free however I don't want to shoot that for elk and deer.

300 WSM-

200.20 x berger or 208 ELD-M
 
200.20x should be able to be pushed faster at similar presures. 208 ELDm has a little BC bump and will have a shorter "neck" terminally which may be more attractive on deer at least.

Dont think there is a bad option.
 
The 185 classic hunters shoot great, would either one be a step up as far as bullet construction or am I chasing rainbows?

It really just depends how you define "chasing rainbows". I've watched a lot of animals get shot with a 300. From the cheapest crappiest junk to cutting edge good stuff. It really all works.

I think its worth at least trying the two you mentioned though.
 
The 208 has been the easy button for load development in two different 300 win mags. I was super impressed with its terminal performance on deer haven’t shot an elk but I know a lot of members here have used the 208 for lots of big game with nothing but great results.
