I found my load for the lead free however I don't want to shoot that for elk and deer.

300 WSM-

200.20 x berger or 208 ELD-M
 
200.20x should be able to be pushed faster at similar presures. 208 ELDm has a little BC bump and will have a shorter "neck" terminally which may be more attractive on deer at least.

Dont think there is a bad option.
 
The 185 classic hunters shoot great, would either one be a step up as far as bullet construction or am I chasing rainbows?

It really just depends how you define "chasing rainbows". I've watched a lot of animals get shot with a 300. From the cheapest crappiest junk to cutting edge good stuff. It really all works.

I think its worth at least trying the two you mentioned though.
 
The 208 has been the easy button for load development in two different 300 win mags. I was super impressed with its terminal performance on deer haven’t shot an elk but I know a lot of members here have used the 208 for lots of big game with nothing but great results.
 
I have shot multiple elk and a bear with the 208’s. 100-400 yards. I have never seen anything kill better. I shoot a .300WSM @2850fps
 
4831SC in a Hells Canyon Armory .300WSM w/24” barrel.

Also a Sako S20 .300WM with H1000
 
My 300wsm has taken 2 elk with a 200.20x and two with a 208 amax. Both 208s were over 600 the 200.20x was 100 and 6ish.

All shot well and performed well.
 
Looking back on life, I should give the 155 scenar a push through the 300wsm and see if it's as magical as it is in the 308 win.
 
Currently developing loads for a 300 sherman max, and the 208 ELD murder has performed outstanding! From hogs shot at close range (50-100yds) and to 820ish both with great results. Wound channel is best at longer distances. When opportunity presents we will see how slow we can go and still get performance on animals.
