I've used the small and large for elk heads. You're right, neither sizes give a seemingly "perfect" fit with connections, but I haven't had issues with either. Basically determine the angle you want and then decide which size feels more secure.
I can't speak on the VX, but I have the Mark 5 and it is phenomenal. Swaro, NF, steiner, etc. I've owned and/or used most of the best options and the mark 5 is my favorite. Beaten the heck out of it and it still tracks flawlessly.

I can only attest to elk in Colorado and Wyoming, but the sound of a bugle is no real judge of age/size. I've heard deep/raspy rag horns and old mature bulls that sound like a broken recorder from 3rd grade music class.
