I would ask what is the most similar country over what is the best deer hunt. My guess is that the Montana hunt will give you the best opportunity to replicate the sheep hunt conditions, or really push yourself. Test your gear in gnarly weather and all that.
I just moved from WA, did the high buck hunt for years. It is a tough hunt, be prepared for the full range of weather. Been snowed on more times than not, stuck in the tent for days with HEAVY rain. Pick up a black bear tag if you do High Buck in the central Cascades, always saw WAY more black...
Usually a black bear tag isn't too pricey, potentially cheaper than the can of bear spray. I hunt in WA and OR, and have never carried bear spray or worried about black bears.
This is going to be a real system shock, coming from Florida. I would recommend a hot tent if 50 degrees truly feels cold to you. Try spending a weekend up in Georgia, those north GA mountains can get legit cold in the winter months. That will give you an idea of how much you can handle.
I have a bit of each from all 4 companies. I think try something from each company thats a base layer and an outer layer. It took me a while, but I finally got dialed in to preferring the First Lite wool to the others. Then Kuiu for lightweight outerwear. Sitka for heavier weight outerwear...
As mentioned above, a tree stand can be your best friend. Depending on the terrain of the private you are hunting. A fawn in distress call can sometimes bring them in to investigate. Not a guarantee but a good option to have in your back pocket.
