Spydercos do, but they don't retain that sharpness very long. Life is too short for for those steels in my opinion though and they aren't an option for me either. Especially when there are much, much better options for not much more $.

Yep, very possible. Removing the handle is usually the hardest part of working on a handled knife, but it looks like it just has to be unscrewed. Sndmn will take care of you, but I'll offer as well.

I have a fine and extra fine 4" stone in my kit. I carry the fine in the field but this is because I always have a ceramic rod to do quick touch ups. The fine stone is if I let it get too dull and need to work the edge a bit more aggressively to get it back before the ceramic rod.

Seems like you want a knife that can finish the job without needing sharpening to avoid having to carry a sharpening stone. There are some options for touching up a blade out there that don't require much space or weight. DMT makes diamond sharpening stones that are only 4 inches long...
