This is quite important. If you wrap it around a pen or the other options listed it loses a lot of stick and is a total mess to try to get clean flat pieces for fixing feet.

I have a Klymit LWD that I use for paddling class 1 maybe class 2 water. If you have time and can find a decently calm/wide/not rocky spot to ferry I think it is possible to do it safely. If the creek is seriously moving with obstacles in the water I'd take a real boat.
Whiskey is going to be close to the lightest "real" paddle you can get, but my understanding is that the blades are pretty fragile and can chip on rocks.
You can float incredibly thin water in a packraft with a normal load of backpacking gear (6"). The same does not apply with a heavy load of meat. Rafts with larger tubes and greater buoyancy are your friend. Spreading out the weight across the interior and exterior of the raft plays a huge role.
A solar panel is never going to compete with a lithium ion battery. Even the best panels are shockingly inefficient and almost useless outside of direct full sun covering the entire surface of the panel at the correct angle.
