I remove some silver skin and most tendons. All the fat I find gets removed. When I'm doing roasts it's always the fatty parts that have the strong taste so I'm thorough with fat.

Access is one of the biggest variables in my opinion. In some units you can pretty much drive to areas where sheep are found. In many units it will take a dozen miles of walking over rough trails or no trails, not to mention hours of driving mountain roads.

I can't offer much of an opinion on 1 except that I have a hard time seeing all the bulls leave the unit unless it offers no cover for pressured animals. Regarding 2, I don't know if this is the best way, but I usually only call enough to keep tabs on the elk. If I can find them and stalk them...
