I would like to try a fenix 3, but don't think it could replace BackCountry Navigator on my phone.
I guess it really depends on what GPS features you need or want. I utilize land ownership info that can't be reproduced on a watch yet.
Here is what I use in the Rockies. Light and/or medium merino top, light merino bottoms, tiburon or attack pants, down puffy, rain shell, liner sock and regular weight merino sock. The forecast decides if I have the medium merino top and which pants I wear.

Seriously though, good luck in the search. If your patient I bet a used one comes up in the next few months.
I've used Eberlestock packs day hunting and agree that they don't make ideal day packs. I also don't like them for packing meat, if you have a average to long torso.
If you want to buy a new pack I'd look at one of these. EXO, Kifaru, KUIU, Mystery Ranch, Paradox, or my favorite Stone Glacier...
When backpacking, I day hunt out of my main pack. I do not see the need for an extra pack. I can also start packing meat without an extra two way hike to get my main pack.
Having used quilts for the past several years. I really appreciate the flexibility and weight savings. The Sierra Designs backcountry bed doesn't look as flexible and weighs more than a comparable temperature rated quilt. I haven't and don't know anyone who has a bed. So my opinion is biased.
Comfort is subjective and too personal. What is comfortable for one may not be for you. See if people locally have packs you could try on. Even then it is pretty hard to say until you have some trail miles with weight in the pack.
If you want a true 1.5 day pack size with serious hauling capabilities the Stone Glacier Approach bag is pretty hard to beat IMO. I've done mountain goat, elk and mule deer pack outs with this setup. The Approach is one of my all time favorite bags.
Welcome, watch the classifieds for the gear. Before you buy, I would do a fair bit of reading on here to try and get a feel for what you want and really need. Start by reading the GIF article.
