I agree. Initially I left the Nasal bones in because they do look cool, but I ended up taking it all out due to the amount of tissue in there. I found that leaving the head pointed up with Hydrogen Peroxide in the back of the cavity did a good job of getting rid of the stuff way back.
I just did a Euro mount myself on an Elk. I found that you need to power wash the hell out of the nasal cavity.

I agree there are Elk there but they also seem to know exactly where Craig Barretts private ranch is and another big private ranch that isn't hunted. I saw 1000 head bedded down mid day out in the open on the private.
As long as hunters are taking ethical shots within their ability range I understand. It is where the people
have the attitude "if it ain't flyin it ain't dyin" that bothers me. Too many people will take a shot that is too
long or at the wrong angle because that is the only shot they will get...

I recently got a Sous - vide which is a wand that goes into water to "boil" the meat. It is frequently used in Steak houses to keep the meat moist while cooking and then you sere it. I used it on Elk...phenomenal. You put the elk in zip lock or pressured sealed packet and boil it for 2 hrs...
