Another option is to adjust muzzle velocity(assuming everything else is correct, this is the variable most likely to be off without a chronograph) in the calculator until the chart lines up with reality.
Compare your actual results to what a ballistic calculator spits out, take that correction factor and apply to the 25, 50, 75yd in between each hundred
So assuming 200yd zero, if the calculator says you should be 2" low at 300 and 4" low at 400 but you find you are 2.5" low at 300 and 4.5" low...

.261 for the .243
.2699 for the .277
So assuming they hit at the exact same velocity, the .277 will penetrate a bit deeper.

I personally don't subscribe to this "let's see how small a bullet we can use to take the biggest game possible" game people are playing these days.

FWIW all things considered, 223 is the only thing I would choose for a dedicated coyote/target gun.
PSA has a good price on a 110 Tactical LH 6.5CM so I snatched and also have a Bushnell Match Pro 6-24x50 on the way for it. Pretty excited. Eventually it will get a MDT XRS.
Having an open mind is great, but there is a reason .30 has been so popular for so long....it works. "30 cal or nothing" is just as silly as "30 cal is old so there must be better"
If it's a case of "im not going to use use the 308 because I now have the 6.5" because it's "better"....... I say keep using the .308 and put that money into another few days of hunting during the year. Nowhere near enough difference at the ranges you stated to make any difference. Dead is dead.
Within 400yds or so it really doesn't make any difference. Beyond 400yds 6.5 takes the lead but both can still kill game effectively with proper shot placement.
The big difference I see between them is recoil. Assuming the same weight rifle, 6.5 will have quite a bit less recoil and so easier...
I wouldn't say 6.8 is minimal recoil.
That being said it ticks all the right boxes except rifle selection is not great and ammo availability/assortment is worse.
