Any of those 175s you list is definitely a long jump. Only way to eliminate the variable of excessive jump is to seat some long, load them individually and test for groupings.
Does your barrel have an appropriate twist for the 175 gr bullets? I kinda doubt the jump is ruining your accuracy.
Just out of curiosity have you measured the approximate coal if you were to seat the bullet with the base of bearing surface at the shoulder/neck junction? It probably won't fit...

This works well with all types of powder, and it's good to have as a backup in any case. It's not super fast but gets the job done.
I can't speak about their rifle primers as I've never seen them anywhere, but I have gone thru a brick of their standard small pistol primers and would buy more of them.

Sorry, I should try reading. I see you called them already. I've heard some brands of reamers have very little freebore, while some have more. Unfortunately it sounds like you didn't specify a custom throat so they chamberer it standard for their reamer.

I would call Sterling and let them know. It all depends on the reamers they use, which may or may not be saami spec. Did you provide them with a dummy round (no primer or powder) loaded with your bullet at your desired c.o.a.l. when they chambered the barrel?
Lots of great bullet choices in .264 and .284. Can't go wrong with either choice. If you don't hand load, I would consider a 7-08 or 6.5CM, or even .243. Should be a lot of factory ammo choices for each.
