I was at the coffee creek area a few weeks ago. I am a new hunter so can't really comment. I didn't get very far in either. The area is nice, but was pretty crowded. I didn't see any other hikers on the trail, but lots of people in the campgrounds and decent amount of traffic...
Dispersed camping is permitted on most national forest lands. There will often be no overnight camping signs at trailheads because the don't want folks car camping at trail head parking areas.
Never hesitate to call or swing by a ranger station.
I backpacked out to little duck lake in the Russian last October. We only saw two day hikers aside from our group and no one else parked at the trail head. Great trout fishing in the lake too.

I got a new klymit insulated static v on camofire a while back to replace my thermarest z lite. I’m a side sleeper and toss and turn a lot and it is super comfortable. It is a bit heavy but for the price and comfort it is totally worth it.
