I sous vide my last batch to get to temp then ice bath let sit in fridge over night and cold smoked the next day and it came out great, I was getting hot spots in my smoker and it required way to much babysitting and tried the sous vide way and it came out good
Mine has never needed added humidity I just control it with dehumidifier. Those ink birds are great. It took some figuring out the right dehumidifier because when the controller is not calling for it the power is off, some units need the power button depressed to activate and when power is off...

Yikes I usually leave it loaded for weeks as well. I shot one at 220 last night and split the top of the heart in half with a load that’s been in it for at least 2-3 weeks. I probably have 100+ shots on mine and it’s never seen a patch and just as accurate as the day I got it.

I work at a terminal I wish it was 7 and 7, we pretty much work 6-7 days a week all year. I’d rather make less with more time off. Some of the senior guys with no kids at home will go on 12 week stretches of 7 days a week. The owner operator drivers do very well too.
