It really comes down to how you like to use a knife. I have the Carbon as I prefer the shape. 5 years ago I preferred a knife with more belly and would have purchased the Serac. I also carry the Kestrel Skinner so I don't need or use the knife in the same way I would have before.
I've become a big fan of my McMillan Game Hunter and the very similar Paradigm carbon stock. They are very versatile and I prefer to shoot them off-hand compared to a traditional stock, which surprised me. Bipod, tripod and off a pack are all better as well.
The current barn is a timberframed barn, with wood from the property. My brother is a big fan of over building things, you could probably suspend a car from the rafters. The previous shop was hand build rafters, designed for the loads. I wouldn't trust composite (TJI) joists for this use.
If you're planning on processing meat in the shop, then IMO water/sewer is an absolute must.

I ended up buying the Kutana last summer. I've used them exclusively since then. Haven't found a reason to switch back. They are super tight on the boot, which is a pain to put on/off, and the toe lace hook is a pain to get off. But once they're on, they've been solid.
