Lot's of options. As others have mentioned, I'm a fan of a .284 caliber something or other. I would seriously consider a stainless, synthetic stock build. For western hunting, weather is a pain sometimes, blued rifles don't always fare well.

H4831 with a Sierra MK 168grn. 3124 fps average for a 5 shot, variance no more than 10 fps. My gun shoots that lights out. If I were working up a new load, yup, 180 or 190 grn something with a much better BC. But, I just like that load, so I probably won't ever change. Old dogs and new tricks...
Maven 12x50. Light, clear, and will save you a few hundred for other gear. If not, Sig Sauer with the range finder. I use those. They are heavy. I have a lot of optics. Big three, Vortex, Meopta, etc. For the money, Maven.
I have killed a couple elk with busted fronts that were pretty gnarly and infected. Rest of the animal was fine, didn't notice any odd flavor. We did keep meat from that injured shoulder seperate though, just in case. Sounds like you will be good to go. And congrats on a neat experience.

My late father in law gave me a piece of advice a while back: Great way to ruin a successful hunt or fishing trip is to pull out a tape measure or a scale. I have abided by that since. All elk are nice. Some are just nicer than others.
