    Those look very similar to the Grease Monkey nitrile gloves from Home Depot. I've been using those for years, they're great. Hold up great, and grip the knife well after they're bloody. I don't think any gutting glove is going to protect you from a Havalon cut so I wouldn't worry about that...

    If you have both bags, I would bring the 0 degree bag. Weather can be anything from 65 degrees and sunny, to 15 degrees and a blizzard. Even if it's warm during the day, nights will still be around 28 degrees for a low. I've never been too hot in a 0 degree bag in October.
