I'd hedge this way. I'm not sure what you spent on the three of them, but I imagine it would be enough to get you close to the cost of the Kowa 553 you wanted, or into the used market of others, that will undoubtedly have better glass than the three you've got.
3500 or so would probably be fine, but I suppose it depends on your gear list. The bigger packs can usually compress down really well too, so it doesn't hurt to go bigger.
Has anyone ever handled the Hunt Hard Eagle Eye bino harness? There seems to be pretty much zero info out there on it. Looks to be a full coverage, forward opening with a couple of side pockets, and maybe a zippered front pocket?

I would be looking at the backpacking category of boots, or if you want a stiffer boot, look at mountaineering boots. Backpacking boots would definitley be where I'd start.
Maybe for turkeys, but otherwise just buy what you think looks cool. I like camo, especially for nifty hunting specific items like a bino harness, but I don't buy it under any misguided notion that the colour will help me be more successful, I just like it.
I think you'd be fine while you were active, but it might be a stretch down into the 30s for glassing or anything stationary. A lightweight puffy like the Cirrus would probably cover you for that.

I like them to keep everything tight to my chest. Using the regular webbing harnesses or the Rick Young harness the binos will sway and bounce.
They provide some protection obviously.
