+1 for not using SST. The design of the bullet is not ideal for a bigger animal such as elk. I was able to shop at Scheels for 180gr Interlock bullets and thats my backup rifle load for deer and elk this year.

+1 for staying away from v-max or similar bullets for deer. For what its worth, I have had very good luck with 1:9 barrels shooting 60 grain bullets. I have a preference for 55-60gr soft points... but if you want to shoot the extra $, go for the Barnes bullets designed for deer sized game.

Update: I tried out a couple 22's and got consistent results. I also tried 9mm out of a G17 and G19. The numbers were consistent with advertised velocities. I tried the 300WM and 308 again and got more realistic numbers. 300WM was pushing ~2950fps and the 308 was pushing ~2640fps with 150gr...
You can't go wrong with any of the calibers @ramsdude47 listed, they're all proven big game harvesters. I am partial to .30 cals, particularly the 300WM.
