I was happy with these. they are sold out but should give you a starting point for size and material and such. I was able to vacuum seal above the zipper, and cook and eat from the bag.

If you like cooking for yourself at home (or prefer your spouses meals to restaurant) i think its a no brainer. I run lots of chili/curry/ thick stew type meals and have been very pleased. I use a $55 dehydrator and vacuum seal the foil bag pictured.

Just out of curiosity, why wool pants? I love merino and wears lots of it year round but have found that I much prefer nylon pants plus wool long johns when its cold enough. Wrangler makes that more budget friendly.

Check out Grommets Leathercraft. they have a website and amazon store. I have their horizontal Scout steep country sheath and love it. Kydex with leather belt loops.

For small roll tops, Leader makes bags that are great and cheap on amazon. For larger/heavy duty back of the truck bags I like sportsman guide - they make duffel and backpack versions
I like the hidden canyon for skinning and breaking down deer. For those that prefer the shape of the steep country, you can get a 3rd party sheath here that wears like the hidden:
