If you want a blue marlin then I would suggest going to the Outer Banks, NC. Terrific fishing there for all billfish, tuna, dolphin, wahoo. Some of the best captains & mates in the world fish out of Oregon Inlet, NC.
Elk for me. For someone like me who is from the east coast, hunting elk is like taking the best parts of turkey hunting and the best parts of deer hunting and combining them together. Plus elk eat better than deer IMO. The vocalization makes elk hunting superior.
I would go with the Franchi, M2 or Montefeltro. I bought my son a Franchi Compact and now he has outgrown it but I was able to order a full size stock and now I am going to use it as a turkey gun. It is ultralight and a bad little gun. I would be wary of a Turkish copy myself.

I would pick archery, especially since you have already gone during rifle season. There is nothing like hunting elk with a bow during September. And having the hunt on private land where there is little or no pressure is a no brainer IMO.
