This is what I did. Got an older model Promaster XC-525C for under $200 from Cameraland. So far its held up great. The factory head is definitely usable and thats what I ran on my hunt last year. I did get the VA-5 head for this year.
No experience with the Manfrotto, but I've been using the Sirui VA-5 head at the range and taking it out with me on hikes. Both binos and spotter feel smooth and it's what I plan on taking with me on my hunt this year. Give the guys at Cameraland a call. They'll take care of oyu.
I would even recommend an Extra Wide quilt. For reference, I'm 5' 9" 170lbs and run a Extra Wide, Long quilt and the extra wide quilt is great when tossing and turning
I used an EE Revelation 0 degree quilt on a hunt in Northern MN last year. Temps got down to -2 one night and I never felt uncomfortably cold. Slept in my base layers and an R1 hoody on.

EB Guide Pro pants. They fit closer to the skin around the thighs compared to the Prana Zions that I have, but the material stretches so its not uncomfortable by any means.
I ran the the SG Krux Evo 3300 last year and it carried the weight great. If you have the opportunity, try out both the Krux and X-Curve frames, load them up with 45lbs, and hike a mile. How the pack fits is decided by which frames fits you the best. Both frames fit my back great so I went with...
