I just started the MTN Tough 45-70 program. I’m really glad I gave it a try. I think they did a Great job with the programming. It’s intense and they have excellent guidance on how to scale it based on your current strength and fitness levels.
I like your workout plan. I have a decent six pack. I’m around 11%. I’ll cut down to 8% before the hunt, but I have no desire to be single digits long term.
6’3 ~230 here with a useless 330 lb bench. I want to lose ~15lb 6 months before my 2021 sheep hunt. I’m working to build up my leg and core strength with squats, dead’s, planks and cycling.

My first sheep hunt, cardio wasn't my issue. Hardest part was coming down the mountain with a sheep on my. back. If your back can take squats, I would recommend it. Build your core and your legs.
I missed the 10 lb rifle note. 6.5 CM is plenty for sheep, 300 WSM is a great cartridge too. If I had a 10lb sheep rifle, I would be looking to cut 2 to 2.5 pounds.
Only one Dall sheep hunt experience here, with second one booked. Train as hard as you can without risking injury. It will make your hunt more enjoyable. Find a way to train with a pack and gain elevation. I had wet feet most of my hunt. Extra socks would have been nice.
