Both places are pretty much the same. If your not looking for a giant you'll have a fun hunt and get in a few stalks. Don't overlook "small" public areas. And as others have said, you can truck camp and walk into every place you'll hunt without a problem, no need to tent back in the country
Mid/late December would be better than thanksgiving in my opinion. Rifle deer season will be over and you will have substantially better luck getting permission to hunt private land

Any reason you have to be in the stand? Could you hunt from the ground to get the wind in your favor? I hunt from the ground a ton without using a blind just whatever natural cover is available, works great and you can be very mobile in your locations
I don't think the genetics change, but the amount of certain genetics in a deer herd can change. If everyone shoots 4 point+ deer and passes on 2-3 pointers then the 2-3 pointers become more numerous and therefore pass on more of their genetics. The podcast that rokslide did about antler point...
If the antelope are on to you anything over 50 yards is a guess. They can jump the string so fast if they are locked in. If they aren't on to you then feel free sending it as far as you can ethically shoot
