What is this yellow substance in my bone broth?

This was in a pint of venison bone broth that I just defrosted. I made it a month ago, the only thing that went in were the bones and salt. The texture is a little rubbery, no odor. It doesn't smear like fat. My only guess is it's little bits of meat that didn't get filtered out. Thoughts?
