using Excalibur Dehydrator with liquidy foods

For those of you that have Excalibur Dehydrators, how does it handle saucey foods like chili etc? This video has an example of what I am talking about - https://www.youtube.com/watch?v=hu1-9DkmUKI&feature=youtu.be&t=460 The Nesco dehydrator she uses has trays with an outer rim which looks like it would help hold the food in. With the excaliburs, I see that the trays are just flat mats basically, which I'm thinking would be a problem for these types of foods, unless you cooked them down really thick before transferring over to dry.

After years of wanting a dehydrator, I think I'm finally going to get one. Looking forward to any advice you guys and gals have.

I have an Excalibur dehydrator and made 1/2 inch deep "trays" out of Reynolds non-stick foil when I dehydrated my chili a month ago. Sat them on the slide out trays in the dehydrator, they worked great.

The excaliber comes with mesh trays and you have to use a liner for any wet foods. I use the non stick tray liners for wet foods or fruit roll ups. You can buy the expensive ones from Excaliber or the cheap knock offs. They are made at the same factory. If the food is leaking fluids, you don't fill up the tray and allow for some flooding around the edge of the food layer. I do reduce down some soupy foods to get the excess water out. However, jarred marinara sauce goes right onto the lined tray.

Once the stuff is about half done and turning into leather, you flip the liner over and pull it off to let the food finish out the remainder of the time and dry on the mesh tray.
