Umai drying bags

I’ve got a whole hind leg from a deer that was in the freezer reserved for a flip flop party . I don’t think I’ll get to go It this summer so I’d like to do
Something neat with it . I was think of aging it in one of those Umai bags for 40 or so days bone in.
Has any one had experience doing this ?

Never done a deer leg in an Umai bag. Are you thinking of just dry aging it, or going to cure?

I've cured a couple over the years to turn them into Morcetta. Nice change of pace, but not something I do often.

Well I didn’t get the bags in time and ended up aging in an empty fridge this pic is after the first flip 5 days in

And today was the day .. after 32 days it hit the board to trim

I did not weigh the start or end . But I was quite surprised with the eventual breakdown . It seemed like
25% of the weight is the bone
30% of trim rind (dog jerky )
35% final yield of dense delicious looking steaks
I’ll cook them in a few day and update for any one who cares …
