The rib role!!

Gravity really helps in that situation.

I think if you cut the diaphragm the lung should drop down to give you some clearance to get the knife blade between the ribs. (if doing gutless)
 
The lungs drop anyway if they haven't from a bullet hole they will as soon as you cut into the first rib space. I do that with deer and the lungs are never a problem whether hanging or on the ground. Gravity does help when hanging but it's not hard on the ground either if you don't mind really getting into the job. If you are the type who tries not to get anything on you when you clean then it's hard on the ground.
 
Ive done tons of beef cattle and this is the first time Ive ever seen this method! Ive been wasting tons of burger over the years widdling around the ribs. Awesome vid.
 
I was able to do that rib roll on my dad's antelope yesterday for my first time. That is a slick technique. You can pull a lot of meat off in a short time. After that there really isn't any meat left on the bone. I will run all of that through the grinder today to use in the jerky shooter. It should make some nice jerky.
 
The rib roll is a great technique for getting the maximum amount of meat off of the carcass.
 
Basically I do the same thing gutless but leave a thin amount of meat in between the ribs. You will most likely puncture the paunch on the rear ribs if you attempt this using the gutless method. The video was a "gutted gutless" kill.
