The II comes with a ball head and is about 1/2 pound lighter if I recall.
The EZ is a little stouter, from what I've been told, and comes with a perfectly good pan head. I have the EZ and I like it a lot. I eventually replaced the head with a Manfrotto 700RC2 fluid head, but that added weight. I do prefer the fluid head, but the pan head is a great option and lighter. The EZ is a really good tripod and seems to be the gold standard for a good tripod in the $100 range. That being said, one of these days I'll likely spring for a carbon fiber model. When glassing from a sitting position the aluminum ones like the EZ are fine, but add some height and they get a little shaky.
