The material looks like Olive XPAC, which would predate the version 2.0 bags. The version 2.0 bags just came out in the last 2 years or so.
 
Correct! This is the original in xpac. Unfortunately I haven’t kept up with their line so I can’t tell you all the differences in the pack and frame between the two.
 
My understanding is the frame and suspension would be the same, and the variation is on the pack itself. There is a new belt and fastening system. But, I don't know if that aligned with 2.0 change.

There were incremental upgrades happening year to year (stitch reinforcement patterns, etc.) before the 2.0 switch.

A lot of the cutomization options (like high/low pocket choices, zipper vs not, etc.) were removed by 2.0, and that also went along with a fabric change.

My understanding is that all the 2.0 packs have internal load shelves, and at least the Goshawks all have side zippers. They also come with lids (maybe not when purchasing bag-only) but those can be added afterwards. The hip pockets changed, as well. Hip pockets are now smaller overall, but longer with waterproof zipper on top (vs side zip with flap). They are also left vs right mount versions.

I personally run one old pocket on the left, and then the new pair in the front. It's just the best fit I could manage with my other molle stuff like bear can, multi tool, etc. Note that this is with the old belt in XL. I don't know if this would even be possible on a smaller size or new model.
 
Lots of good info there! It looks like they changed the fabric to ultra and then spent those weight savings adding a bunch of stuff to the pack like the lid. Things I personally find silly, but I know the hunting market really loves lots of pockets. Ultra is a good fabric but xpac is still proven. I haven’t been in the market for a pack since around the time ultra came out, so I don’t know much about it. I know it has good abrasion and tear resistance but it’s prone to pin holes and delamination. Maybe the product has matured in the past couple years.

The goshawk stood out to me for its weight, at 4lbs flat vs most packs which were in the 6+ range. Fortunately that’s less of a standout feature these days. And the vertical zipper works well to circumvent issues with the dry bag style pack design when you need something out of the bottom of your pack (for some reason).

The pockets are indeed spacious and low so they’re easy to reach without removing the pack. The side pockets will swallow up two nalgenes each without a problem, and the hip belt pocket will fit two 12 ounce cans, plenty of room for anything.
 
My understanding is they have moved on from the original Ultra fabric a long time ago. It's Ultragrid, Ultra 200X, or Ultra 400X now. When I was doing the research, 400X seemed like an upgrade across the board. I'm not seeing that one much, though. 200X seemed like an upgrade for the expected niche, and that is an option with many current 2.0 packs. Ultra Grid seemed like it might be sacrificing some abrasion resistance for weight, so perhaps not the best choice for Bushcraft.

One more thing. I personally can't use my side pockets while the pack is on. This isn't a problem specific to SO, though. When sizing for heavy loads or long torsos, the pockets move up your back proportionately. The pack bag itself doesn't get longer, just moves up with the frame extensions to place the load higher up (4" higher, in my case). I use a bladder instead, and a 3L does fit inside the talon. I'm planning on moving that to between the Revo Panel and frame. I do carry extra smart waters in the side pockets, but need to take off the pack or ask a buddy to retrieve them for me. The pocket design would be awesome if I didn't need the extensions.

These are absolutely fantastic packs, but not that well known outside of the hunting community.

I already have an Olive XPAC Unaweep (non-breakaway version of this pack) from 2019, and just purchased an olive XPAC Fortress (discontinued, similar to Goshawk, no zipper).
