Pressure Canned Meat Recipes

Because there seems to be some interest and a few threads going that I didn't want to hijack (and because I just bought my first pressure canner and am ready to can my first batch of meat!), I wondered if anyone was willing to share any recipes or meals they like to eat with their pressure canned meat. I've gathered from my research that the meat is delicious in a wide variety of uses (like tacos, burritos, stews, soups, BBQ, sloppy joe's, etc), but what are some of your favorites? I'm curious to hear (and even more curious to taste!).
 
I've had good luck browning meat (deer, elk, bear), use hot pak method, add S&P to each jar along w/ 3 onion peals, couple sliced garlic cloves, top off w/ beef broth, can 90min at 10psi. Hard to go wrong.

I've also experimented w/ canning waterfowl & turkey using chili or curry spice.
Next is to try putting up some duck/goose in enchilada sauce. Red & verde...picadillo style.

My wife and I enjoy Canning together. I would say it is one of the seldom times we cook together-- We typically get on one anothers' nerves and accuse each other of meddling! We have been fortunate in the past 4-5 years to catch close to 50 Red salmon each year, and we have jarred almost all of it (Last year I got to smoke them all because we have so many jars left). One of my favorite meals that my wife has made is a casserole, using our salmon. My favorite flavor is habenero teriaki salmon. We cold pack our meats typically, and ignore the suggestions to add salt. Salt is a preservative, and we are already pressure cooking it. I was raised eating salmon 4 times a week, and when I met my wife I was happy to eat it, but kinda bored with salmon. She makes some of the most wonderful meals with our catch, and has really turned me around! As far as red meat is concerned, our bbq moose meat is phenomenal. We have a friend that makes homemade sauce, and again with a cold pack, we cook pints of moose meat cubed, and drizzled in bbq.
