Opening day Woodie's

Beautiful ducks ! They always tasted nasty to me though. I spent many mornings before school jumping them out of swamp ponds south of Tallahassee. Had a few spots to shoot them going to roost in the evening too.
 
I normally breast them out and marinate but my hunting partner plucked these and I did them in the oven at 300* for an hour after basting with honey the skin was crispy and they came out really good !

Very nice! I was one woodie short of a limit here in NJ last Monday, and my wife and I made them for dinner tonight. She wanted to try Steve Rinella's "Roasted Duck" recipe and we thought it came out really well. She'd never had wood duck before and was very happy with it.

I always loved woodies and where we found them in Southern Illinois during my youth. I probably took them for granted until I moved west and realized that they were few and far between out here. I did see and hear some in northeast Montana last week while hunting pheasants. It was very refreshing to hear them whistling at daybreak.
