I have never owned anything except stock off the shelf rifles and I am looking at buying one rifle to do it all. i am looking for help on building or buying one set up. i have looked at bergara a little but open to most anything. i would like scope and all to be under or around 2500, and be around 6,7 pounds. thanks

Browning X-bolt Hell's Canyon rifle in 6.5 Creedmoor or 7mm Remington Mag with a Leupold VX6 scope would put you in under 8#, even thought its not really a "custom rifle." They're pretty accurate for stock guns, however. And it would be right around that $2,500 mark. That's just what I would do with the criteria you listed though, I'm sure others have different ideas. To do a semi-custom/custom build with a good optic might be a tad tight with $2,500.

ok, so looking at semi custom what would be the range to have decent build as far as price? I am looking for input on scopes as well, i have seen some setups with a compact scope and i liked the idea, is that a bad idea?

Put a custom barrel on a Tikka (Krieger, Bartlett, Brut, etc..). you can shoot sub 1/2". you can go with a customer stock as well below $2500

can you get a good setup for 2000 excluding optics? if so what routes are there? i have heard good things about wildcat stocks, McMillan and christansen arms. i have no idea what route to go but basically I'm looking for an accurate all around one time investment rifle which may be too much to ask I'm not sure

So between me and my kids I've built 9 custom jobs on pre 64 model 70 actions.
pre 64 M70 donor action $600,
cerakote action/BM $150
mcm lwt stock, the one that fits YOU $600
custom SS barrel, chambering and install, action tweaking if needed $600,
Swarovski Z3 scope/talley lwt mounts. $700
So you end up with a great custom rifle made to fit you and your needs, near your budget.

I just finished putting together a 6.5 grendel upper for my ar for around $500. I'm going to use my 5.56 lower and bolt carrier. I went with an Odin works barrel that comes with a moa garantie and a GunTec freefloat rail. The grendel is arguably underpowered, but with 123gr hornadys it should retain around 800ft.lbf at 400 yards with a 20" barrel. If you are looking for more you could go with a creedmoor or a 308, but it would harder to keep the weight under 8lbs for under $2000. As far as a smaller optic I am planning on using a 1-8x or a 2-7x. There are more lightweight 2-7 options available. Choosing the ultimate do it all gun is the kind of decision that keeps a guy up at night.....happy hunting.
