Do any of you have any tips on identifying some specialty fabrics? Specifically, I need some foam and fabric for shoulder straps for a pack. I feel like tweave durastretch is an option, but I think there is some other stuff more breathable.

For shoulder straps and belts, half inch Landau aka Volara foam works well. 2 pound XPE is ok for lighter duty use but breaks down sooner than Landau/Volara. I get it by the sheet from Foam Factory.

Durastretch is good but spendy. I use a heavy nylon/ spandex from Joann's, but they are going out of business. Luckily my mother in-law likes to shop so she got a big batch for me. It has been very durable.

Xpe foam has worked great for me. Spandura is great for the interior lining of hip belts and shoulder straps. For the exterior, cordura is what I have always used.
