Grouse forum?

I looked in the hunting section....we are missing the big game grouse forum...?

So for all those big game hunting types, who might get distracted by big flying birds....what's your favorite backcountry recipe / preparation technique? (ie. For a newbie what do I do if I get one of these big birds down?)

They can be really tough and dry so you need to do something to keep them soft and moist. Put some seasoning on it and add some water or butter, wrap it up in tinfoil and throw it in the fire turned out pretty well for me last season.

When i day hunt for them, they usually turn into fajitas.

Cut 'em into strips, then dredge in flour and Cavendar's seasoning, fry in butter or bacon grease...it's just this side of heaven.

Sounds like good ideas, but if you're in the backcountry are you rolling with butter and bacon grease?

You can buy nalgene brand small containers at REI. I have a small one that I fill up with olive oil when I backpack. It has never leaked or broken in 4 years of use

Grouse poppers are a fall camp mainstay for me and my buddies.

Cut a jalapeño in half. Fill with cream cheese. Take a chunk of grouse breast and wrap with half a piece of pre cooked bacon and place on a jalapeño. Throw on the barbie and cook until meat is done.

Yum!

No jalapeños no problem.

Take a chunk of grouse breast, a water chestnut and wrap with half a piece of raw bacon. Scewer with a toothpick and throw on the barbie until bacon is cooked.

Quick backcountry grouse.

Breast out grouse. Place in a pot or pan with about an inch of water. Bring to a boil. Shred grouse as it cooks exposing non cooked portions to the hot water. Set cooked pieces aside until all grouse is cooked and removed from pot. Dump a package of instant rice (I like the Mexican blend) and cook per directions. Once cooked mix in grouse and add spices to taste.

I do something similar to BroodBuster.

Remove and cube grouse breasts, sear in vegetable oil (ideally with onions and garlic), add water, boil, use to rehydrate instant rice or ramen noodles. Add some manner of salty spice mix.

Grouse schnitzel is my favorite prep, but doing it in the field is usually beyond the ingredients I care to haul. Hank Shaw (honest-food.net) has a grouse and barley salad which is awesome with a mix of species. I can get into dusky, ruffed, and spruce in the same trip around here, and the different colors between the three make that salad really pretty.

Bringing this to the top as the grouse are out and moving in North Idaho with the little snow we have got and the leaves down.

Looking to do something good with this. Just one might not be enough, but wanting to try the schnitzel method some time. What else it out there.

Needed up just battering and frying in butter, then a bed of rice with cream of mushroom on top. Youngest loved it, oldest liked as well as wife. Turned out good enough, will have to get a few more.
