We caught 25 or so hogs in a remote trigger trap a couple weeks ago...I swap chores for access on a local farm.
Picked out a couple good size eaters sows. They been eating farmers crops soy beans and corn all summer.

Took a couple of the hams deboned them, brinded them for a few days, smoked them at 180 over night mopped them every 4hrs or so with apple juice until they hit 165. Used mostly Applewood but also a bit of hickory.



Let them cool and then sliced....You can't eat them all, but you can pick out the better ones for the table.
