I really like the Bell & Carlson handle that's on my knife. It doesn't get overly slick when it's covered in blood, and it fits well in my hand.

Cork. Light, sticky, cleans easy, never cold.

Wood and sheep horn. You can get some sheep horn slabs on eBay that look identical to dall sheep, turn out very cool.
