Elk Chili

I freeze mine in plastic storage containers and then it's real easy to just pop them out and into a pan to heat them up when I want some. They keep well in the cooler that way.

Same here. a chef told me freezing it adds to the flavor. I find just keeping it in frig. for two days also does the trick. This will be frozen until we head out for our hunt on the 3rd. I also made some pork chili verde. Making it is a pain in the ass but well worth the trouble.
 
I always make as per recipe, then adjust chili powder to give it the heat/spice I like. I sometimes leave it alone until I serve it and have some chili powder on the table so everyone can add it as they see fit.
 
Nice. Hopefully next fall I’ll have an elk to turn into chili. Until then it’ll be white tails. Goose dumplings are good too.

I see beans in it. I like beans in my chili, but I like all chili. I think I’ll cook some up next cold front and eat it on the beach catching bull reds once the wind calms down and turns back to the southeast. I should have fished today but had to catchup on mowing l

I use salsa instead of tomatoes and elk burger instead of beef. I'll throw in leftover steaks, smoked tri-tip, hatch chili's, etc.

I put two whole jalapeno's in the Vitamix with some tomato sauce and liquify them, then add cayenne powder for more heat as needed. Sometimes I'll add some diced Hatch chile's to the chili as well.
 
Looks fantastic! Now I just have to close the deal on one in the next few weeks so I can make it.
 
I was annoyed when my wife suggested chili on Sunday and then went to the store to buy ground beef for it. I've got a couple hundred pounds of ground elk and deer out in the deep freeze for this very purpose!
