Had bear meatballs as part of a potluck dinner today. My friends who live on the coast (who I was visiting) have bears come in every winter and wreck their bee hives or destroy their apple trees. They've been eating two or three a year, so I guess they're eating 'em to beat 'em. It's a good strategy.
Bear is good. I brought back as much meat and fat as I could from Alberta. I've had bear burger (100% bear), bear spaghetti, several bear roasts, bear backstrap, and making some bear bacon for Xmas. I rendered all the fat I could and have been using that for as a substitute for cooking oil in all kinds of stuff.
