I am considering buying a pard nv007v and attaching it to my Howa mini action 6ARC Excel chassis. Scope is a 2.5-15x44 Tract

The biggest complaint I have heard about this is it adds length to the back of the scope making getting proper cheek weld tough as it pushes your head to the back of the stock. I think this can be mitigated with the collapsible stock on the Excel chassis.

This will just be used for shooting varmints at ranges under 200 yds. Mostly racoons, opossum and coyotes. The rifle is my truck gun and I don't want to put a dedicated night vision scope on as I feel it hurts the utility of a rifle (I have a arken night scope on a 6.5 Grendel ar and just don't like it mainly because it's reduced daytime functionality)

Does anyone run a setup like this? Are there better options out there?

I’ve done a couple of clip ons including the one you are speaking of. For your scenario I think it will do fine. It is no where near as good as thermal. If you can afford it I would consider a front attached thermal clip on though.

If dead set on rear NV know they work better with a ffp scope. Something about how the multiple lenses focus.

The rear distance isn’t a big deal. You don’t really look through NV the same as a regular scope. Your eye kind of welds onto the rubber piece around the lens instead of hovering. It will change your cheek weld, but not a ton. But that goes away with a front mounted thermal clip on.
