2025 Spring Nunavut Musk Ox

Getting a 50# hunk of meat from the most desolate place in North America is no easy task but I did it with a Sitka Drifter duffle, a sleeping bag , a coontractor bag, and a lot of pleasant patience and determination. And I sweet talked my way out of over weight charges the entire massive journey from Cambridge Bay-Edmonton-Michigan-Montana.That may have been the most impressive achievement of the whole journey!

Once home the leg just fit in my little overflow freezer in the garage. I wrapped it in Saran Wrap and again the contractor bags and tried to figure out when we could coordinate the cook.

Andy and I both have friends at Yeti and they always have a huge tent at the TAC venues. They were gracious enough to base the Flip Flop there. We got everything cleared thru the owner of the TAC and the ski resort management and were good to go.

The “flip-flop” is an experience. Andy mops on the special marinade then puts it on a ripping hot grill. After a few moments he flops it over and slices off the seared meat. Once the quarter is down to raw meat he mops the sauce on and flips again. This process continues until all you have left is the bone. That is the prize for the meat provider.

Normally the friends and family stand around the grill and socialize as the meat is cooked all reaching in as they deem fit. Word at TAC got out and we ended up giving our friends all they wanted and then let the general public who were still around coming in late off the courses a nice slice or two. All told there were about 250 people who got to try musk ox Saturday evening. Not a bad appetizer! Maybe that will spur them on to a hunt. It was very rewarding for me to be able to share this and relive the hunt. It was amazing to see that giant and delicious hunk of meat turn into just a bone.

Check out The Flip Glop Guy, he is a very interesting dude, there is lots of info on YouTube. I’m glad our paths crossed years ago. He makes things better and I love to see this tradition continue.
 
One of the ladies at the wildlife office killed a musk ox recently. She ground the whole thing into burger…I almost cried.
 
Flip/Flop guy is impressive! You clearly had faith in his method. The communal aspect is a real treat. Happy all turned out well.
The story of the whole animal grind is absolutely appalling!
