You're not going to go wrong with any of them mate - so it will boil down to personal preference. Check with the manufacturers, but I think most of them have a fairly lengthy return period, so if you can afford it, order all of them, test them, and then return the ones you don't like.

They only make the belts/straps etc in solids. This was a decision they made at the outset to ensure costs were kept relatively low. You will not find the new generation frames (including straps/belt) in anything other than solid colours.
The Coyote frame will look great with a highlander bag.
Hopefully someone will post this; however the description states that the new frame works with all current SG bags, suggesting that the process is exactly the same.

I think I'll be going in this direction. I have a trip out to Australia in April (sadly not a hunting trip) but suspect I will be ordering a X-curve and 5900ci on my return. Like you I find the Kifaru really comfortable but just love the sleekness of the SG...

In terms of the new frame getting in the way of your head/vision because of its shape - how much of that do you think is related to your body-shape/size in particular. Would a taller/longer torso person have the same experience?
Its hard to answer without knowing what kind of gear you run, and how you like to hunt and when you like to hunt...
If all your gear is lightweight/low volume, then a pack of around 50L (3000ci) should be ample for 4 days. If you have some bulky gear then you could be pushing it at that size...

I think you can run Exo bags on kifaru frame (there is a post about it somewhere showing how), but you cannot run SG on a kifaru frame or vice versa as they use slightly different set ups.
There is no problem with bags slipping off frames - these things are rock solid and have been tested...
In terms of packing out, I can only comment on Kifaru and Stone Glacier:
