I’m 5’11”, 175 lbs. and wear an XL Stratus to layer. My shoulders are a bit wide but I am always amazed that some hunters way bigger than me can comfortably layer under an XL.
Yeah the original Incinerator had around 4.25 oz. of 650 down and 2.85 oz. of silver Primaloft. The Guardian has 11.4 oz. of 850 and should be much warmer.
The Redington Sonic-Pro HDZ is a very good wader for the money and Redington stands behind its warranty.
I’m not a fan of BOA wading boots as they freeze up too much in cold weather. I have had good luck with Simms boots. Very comfortable and durable.

Sanctuary 2.0 will be warmer but not quite as durable as Fanatic bibs. Both are great bibs but if I am standhunting in temps under 20* I’m wearing the 2.0.
