    Tough backstrap; can I fix it?

    I have even had tenderloins out of a mule deer doe that were extremely tough. Tried dry aging the second one but didn't really help. Put the rest of her through the grinder with extra fat and even then it was still noticeable. All I could figure is that she was just a tough OLD doe.

    Getting my son in the woods

    Great pic and better tradition. Got my 6 year old twins out helping clean squirrels this fall. They got to be part of the entire field to table process and really got into it.

    300 Axis, 75 gr brass insert, 125 gr Magnus black hornet A little over 500 grains. Just need something a little larger than a grouse to see how they work!

    Elk ribs

    Cook suggestion. Lay out on a broiler pan and drench in balsamic vinegar, season, fill bottom of broiler pan with water and a little more balsamic. Cover/seal pan with foil. Bake at 250 for about 3 hours. Finish ribs on a medium grill while basting in your choice of sauce! This method works...
