I have same gun, shoots thor 300s and 330 pb/elrs well with bh209(80grns weight). put a anarchy brake and shoot the Williams globe floro dot. daughter took a co elk this year with it and the elrs.
Colorado = more people than elk
NM = More elk than people
A lot changes depending on the NM unit and area you're hunting. If hunting a high quality hard to draw unit with quality bulls, my strategy would change to target a bigger bull.

I've had to use my mug to scoop and fill my 4l platypus bags. Trying to scoop from a shallow source is difficult with a bag. Either a mug, cut beer can, plastic jetboil bowl, etc, to scoop helps a lot. If it's a small flowing source, follow it down where you can get bag under it, or dam it up.
The 100grn are pretty popular and will probably sell decent on classifieds.
I went with the 125grn(buff) IW because I couldn't get 100grn without bleeders. I favor accuracy and penetration over cutting area.
Why not just go to 125grn head to get the weight where you were if you like your current setup?
If penetration is your motive, I wouldn't go lighter.

I've been hunting 10-12k high in CO. In three years, in the same general habitat, I can't recall seeing a buck bedded in the open. The area has a decent amount of timber and I always see the deer feeding up top above the timber or in the meadows and then moving down or even over ridges to bed...
How high are you hunting? Are they bedding in timber or is it more open?
You sound like more of an opportunity hunter. I would get the elk tag too, still hunt and go after the first thing you see or hear.
