It's easier to make a bigger pack smaller, than a smaller pack bigger. I'd be looking at something between 3500-5500 ci. Any of the major pack manufacturers should have something for you within this range.

No experience with the Sea to Summit, but I do have the REI Magma 30. I think the 3p is definitely more of a limit rating than a comfort rating. You're probably fine with it above 35, especially if you have something for colder temps. It's a good quality bag and I haven't had any issues with it...

This is a really cool take on a larger shelter. Did you consider being able to fully separate the two sides since the doors go up so high? I think it'd be a huge attraction to be able to split the tent weight amongst two people.
