Keep your checked bag under 50lbs and your good to go. I checked 210lbs of fish a couple weeks ago. We had 9 checked bags total. I used AA cargo for my moose meat and 2 sets of antlers wrapped together last Sept, also very easy.
I will say a pilots safety record was not on my vetting process when I was looking. After my hunt last year, a safety record will be part of my proccess from now on. Landing on ridge tops is not an easy deal.
12oz water, water filter, 4 game bags, some snacks, a lighter, rain gear, a little electrical tape, couple paper towels and 2 rubber gloves, license, a knife and 4 extra blades. No need for anything else besides my weapon. KISS
I'd also 2nd God's Country Aviation. I hunted with them last year, great outfit. I believe he is booked unit 26 and not taking reservations for 27 yet. Like said above, it really depends on the type of hunt you want. Good luck!
