Terrible at sausage making. Need help!

Definitely check out Hank Shaw (Hunt, Gather, Cook) as stated above. Also look for recipes for traditional Brats, Italian Sausage and Cheddar Jalapeño brats. Tons the people have for beef or pork but work perfectly with wild game. And absolutely recommend a stuffer on the larger side, it gets...

Hi Mountain Salami Sausage Kit

I just hung it at room temp in my kitchen and it came out great, I would say it was approx 70 degrees and very low humidity. I don't think its a big concern though

7 Rem Mag ammo for Elk?

They were handloaded, but the 160 Acubonds have worked very well for me. Berger 175s have been excellet too. Both I believe you can find in factory ammo.

Backpacking Rifle Carry Methods?

Absolutely love the Kifaru gun bearer. But I just use the upper strap and a length of 550 cord coming down for the butt of the rifle off my belt.
