It wasn't tough by any means, tasted great, makes great sandwiches. Like a few guys at work said, like a well seasoned well done steak. Was a bit dry, but as the guys here said, no fat in it! Next one will get smoked, then braised till 205°, I think that should do it.
I have found the M1 carbine, Ruger 99/44, and Ruger PC Carbine 9mm very fun firearms to shoot. My wife uses up a ton of ammo with the PC Carbine, I really enjoy it as well! If you're okay with shooting a lot of 7.62x51, an FAL is great!
Chargemaster lite user here as well. I really like it, great for ladders and stick powders. I've double checked it A LOT with my 5-0-5 beam scale, and it's always within .1gr.
It was cooked to 190°+.
I do have a braising pan I can use on the next one. That's probably the way I'll go with it.

I have replaced my shocks with Bilstein 5100's. Supposedly a little stiffer than stock, but I've never really noticed them being stiffer, just much better feeling, and more confidence inspiring.
I'm going to be grabbing a lb of the Staball HD when I find some locally to try in my 7mm Rem Mag with ~160gr bullets. The load data looks to have some impressive velocity numbers. Very interested in people's experience as well!
