Western hunting truly is worlds apart from Midwest tree stand hunting. I think I'd freeze to death in a lot of the late season recommendations that have been given lol, but then again I don't handle cold as well as most when stationary.
Have to be the contrarian I guess. Give me a good wool midlayer like a Woolpower 600 or Appalachian Gear Company All-Paca crew. Just as warm and light but regulates my temperature and moisture better IMO and will smell better on top of it.
I have the Dachstein 4-ply hat. It's not cheap, like $80...but I like it and it keeps my head warm. I like a bill so I usually wear my Stormy Kromer, then wear the Dachstein over it. Kept me comfortable around 0° F.

Different degrees of itchiness for different people doesn't surprise me, everyone's body reacts to wool differently. There are mon-wool versions for people who react more strongly. You'll have to wash them more but probably worth the tradeoff.
